From my kitchen to yours, I am determined to help busy mom’s like myself become the healthiest & happiest versions of themselves, so you can pass these healthy habits along to their kiddos. Healthy eating doesn’t have to be hard, complicated, require you to spend hours in the kitchen, or break the bank…and let’s face it, if the kiddos don’t like it, nobody’s happy. that is not usually the case.

Snack On-The-Go

Girl I know the first meal of the day is a tough one. You’re running around those kiddos and busy getting everyone organized for the day. Grab this tasty homemade bar for your first meal or a snack during the day. It’s loaded with amazing healthy carbs and protein and sure to be a kiddo fav.

Oatmeal Breakfast Bar

Prep Time: 5 mins | Total Time: 17 mins | Serves: 8

Kid-Friendly, Gluten-Free, Dairy-Free

35g Carbs | 13g Protein | 12g Fat

Ingredients:

  • 1 cup peanut butter can sub for any nut or seed
  • 4 cups gluten free rolled oats can sub for quinoa flakes
  • 6-7 medium bananas mashed
  • 1/2-1 cup chocolate chips of choice (Optional and Enjoy Life Dairy Free is a good brand)
  • Add collagen peptides for more protein

Instructions:

  1. Preheat the oven to 175C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.
  2. In a large mixing bowl, combine all your ingredients and mix well. Fold in your chocolate chips, if using them.
  3. Transfer the batter to the lined pan and bake for 12-15 minutes, until golden on top and a skewer comes out the center clean.
  4. Allow oatmeal breakfast bars to cool in the pan for at least 10 minutes, or until firmed up enough to remove. Transfer to a wire rack and allow to cool completely.

TIPS: These bars will keep at room temperature, for up to 3 days. They are best kept refrigerated and will keep for a week. They are freezer friendly and will keep frozen for up to two months.
