And this hearty vegetable soup? It’s one of my forever favorites.
It’s simple, nourishing, budget-friendly, and packed with veggies—but still satisfying enough that no one is asking “what’s for dinner?” an hour later. I’ve been making this for years, and it’s one of those easy “dump and simmer” classics you’ll come back to again and again.

VEGETABLE SOUP (DF/GF)

Prep Time: 20 minutes
Cook Time: 75 minutes
Serves: 6
Ingredients:
- ½ tsp ground pepper
- 2 tsp salt
- 1 ½ tsp chili powder
- 6 cups boiling water
- 1 lb ground beef or ground turkey
- 1 medium chopped onion
- 2 cups cubed, peeled potatoes
- 2 medium carrots, sliced (or 1 can sliced carrots, drained)
- 1 can green beans (or fresh)
- 1 can diced tomatoes
- 1 can corn OR 2 ears of fresh corn
- ¼ head cabbage
- Add or omit any veggies your family loves or avoids
- 1 can tomato sauce
- 3 cups tomato juice (add more depending on your preferred consistency)
Instructions:
- Boil 6 cups of water.
- Brown the ground beef or turkey with the chopped onion over medium heat. Drain grease.
- Add all ingredients to the boiling water. Cover. Bring back to a boil.
- Lower heat and simmer for 1 hour.
Crockpot option: Add everything to your slow cooker and cook on LOW for 4–6 hours.

- I’ll often cook a pot roast the night before and use the leftover beef to make this soup even easier the next day!
