Mini meatloaves are a nutritious and balanced meal option! Ground beef is rich in protein, iron, and vitamin B12, supporting muscle health and energy levels. Using oats as a binder provides a gluten-free source of fiber, which aids digestion and helps maintain stable blood sugar levels. Together, these ingredients make for a hearty, healthy dish!
Meatloaf Ingredients
2 lb hamburger meat
2 tsp salt
1/2 yellow onion
1/2 green pepper
2 eggs
1-1.5 cups Bob’s Red Mill Gluten Free Oats
Sauce Ingredients
2 tsp mustard
4 tsp brown sugar
2 small tomato sauce cans
1 tbsp Ketchup and Worcestershire sauce
Instructions
1. Preheat oven to 350 degrees Fahrenheit.
2. Sauté onions and peppers with a little bit of olive oil spray.
3. Mix sautéed onions and peppers with hamburger meat, salt, eggs, and oats.
4. In a separate bowl, mix the ingredients to make the sauce.
5. Add 1/4 of the sauce to the meatloaf mixture.
6. Portion the meatload mixture into a muffin tin to make 12 individual loaves.
7. Pour remaining sauce over top of the mini meatloaves and in between.
8. Bake for 30 minutes.
Prefer a whole meatloaf rather than 12 minis? Bake for 60 minutes in a loaf pan instead!
